This is the well-loved, well-used recipe card I wrote out for my father’s Caesar Salad. He was one of those progressive men in the 1960’s who enrolled in cooking classes and this became his signature dish. We grew up on it and never got used to restaurant versions or bottled dressings as a result.

These days I’ll stretch it into a full meal with some grilled chicken or shrimp, but it still makes a great side dish or salad course. Hoping that others can enjoy!

Randy’s Caesar Salad Recipe

2 hours before serving, combine:
1 garlic clove, crushed
1/2 cup olive oil

Combine in large bowl:
1/2 head leaf lettuce
1 head of Romaine
1 can anchovies
3-4 tomatoes

Mix:
1 egg
1/4 cup lemon juice
1 tsp Worcestershire sauce
1/2 tsp salt and pepper

Strain oil over vegetables in large bowl
Add 1/2 cup of grated parmesan cheese
Toss with dressing
Top with 1 cup of croutons
Serve on cold plates

Cook’s comments:

  • You can substitute a little mayonnaise for the raw egg
  • You can omit the salt if you use anchovies.
